Dutch Oven Camp Cooking BEACH STYLE



Dear  friends,
I've missed you! I snuck away from the electronic world for a couple of weeks to recharge my bloggin' batteries ( and my batteries in general )  in our off grid Home Sweet Cottage by the sea. I'm still shaking sand out of everything, including our Lodge Cast Iron Dutch oven! Are any of you campers or backyard cookers? I gave my man- scout one of these cast iron beauties for his birthday last year. He was inspired to try some of his own camp cookin' after some delicious outings with his Scout Troop. So along with our two kids, the dog, and our guinea pig , blankets, beach towels and bathing suites we stuffed our " virgin " dutch oven into the back of our SUV and off we went. Luckily a recipe booklet was included with the pot so once we settled on Lodge's Baked Stuffed Apples recipe we were good to go at least in the food department...

Now all we needed was the perfect evening for a bonfire on the BEACH! 


With the tide just right under a full moon, calm skies and waters on our last night we " broke in " the oven.

Baked  Stuffed Apple's 
12" Camp Dutch Oven 

6 baking apples
1/2 cup raisins ( I used craisins instead of raisins) 
1/2 cup slivered almonds
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2-1/4 cups water
6 ounces orange juice concentrate, thawed
3 tablespoons honey 

 Wash and dry apples. Remove core,but do not cut all the way through the bottom of the apple. In a small bowl, combine raisins ( or craisins ) , almonds, cinnamon and nutmeg. Divide filling among apples. Using fingers, stuff apples with  filling. In a small bowl, combine water, orange juice concentrate and honey. Mix until well blended. Place apples in 12 inch Lodge Camp Dutch Oven. Carefully pour orange juice mixture over apples. Bake between 350 to 425  for 50 minutes, or until apples are tender. Spoon excess sauce over apples before serving. Serves 6. 


This recipe was delicious and would be perfect for an autumn evening under the stars in your backyard, backwoods, and on the beach!

    Of course you needed to recharge your batteries...and what a perfect place to do it.

    LOVE Dutch ovens and am lucky to have inherited two, one from Grandmother Lovejoy and one from my Nonie Clarke. I use them all the time, but you've inspired me to use them outside too.

  7. Those apples look yummy. I have a dutch oven and have yet to use it like I am supposed to. I have cooked a summer stew in it over a fire one year camping though, which included all kinds of veges from the garden and summer sausage sliced up and put in!!
