Tasty Tuesday~ Black Bean and Corn Salsa and Gluten Free Chips

Welcome to Tasty Tuesday at Dandelion House!

We LOVE chips and salsa at our house and I can't wait to try both of these recipes!

This week's Tasty Tuesday recipe ( s ) comes from Shannon's kitchen at A Cozy Place Called Home.

When it's taco night at my house, I buy corn tortillas because they are gluten free. However, I never eat enough tacos to finish the whole bag of tortillas. I also hate wasting food, so I try to find other recipes to use them. One of the easiest ways to use tortillas is to make homemade chips.

Tough Chicks

I can't help but worry about my girls in the dead of winter... This past week we've had below freezing temps every day and yet they carry on as if it's no big deal. When I go out to give them fresh water each morning they cackle and cluck and get me all caught up on the hen house happenings.

We don't keep a heat lamp or a light on in the coop in the winter months. Ameraucanas are bread for cold winters and hearty they are! It gives me great comfort knowing that even though I don't baby them through the coldest part of winter they are thriving and healthy despite the bitter cold temperatures! I  keep the inside of the hen house filled with fresh shavings so they can still take warm dust baths as the light of the sun streams in through the large window...

And, of course I give them plenty of kitchen scraps and oyster shells too! I don't spend as much time outside with them during winter so I love our short visits when I'm doing chores.
How are your " girls" holding up this winter?

Tasty Tuesday~ Winter Salad with Maple Vinaigrette

Welcome to Tasty Tuesday at Dandelion House!
Nourish your family with food made with the freshest ingredients and a dash of love every day!
This weeks Tasty Tuesday pick from the Farmgirl Friday Recipe Box comes from On the Home Front blog kitchen. Last week Nancy shared a winter salad recipe on the Farmgirl Friday Blog Hop and got me all fired up to get some greens back into our winter diet.

I miss the abundance of a summer garden. I love salad but sometimes I find it hard to be inspired in the middle of winter when fresh produce is hard to come by. Recently I made this green salad with dried fruits and a maple vinaigrette. Just my kind of winter salad, simple and delicious!
 ~ from Nancy's post.

I couldn't agree more!  Thank you Nancy! Go to On the Home Front to get her delicious Winter Salad recipe and more!

Growing Zinnias

Even though we have barely set foot into the new year I think it's the perfect time to get started on planning ahead for the next years cut flower gardens. Last year I grew two large beds of  Cut and Come again Zinnia and couldn't have been more pleased with how well they did. Now that I know how easy they are to grow I'm ready to branch out and grow some new varieties this year!
I'm interested in heirloom varieties so I'll be ordering from

Pink Senorita Zinnia
Meteor Zinnia

I love large showy flowers... Why settle for tiny blooms when you can grow big beautiful blooms just as easily? The Meteor Zinnia grows up to 5 inches across. This one will surely be a show stopper in the garden and the vase.

Lilac Emporer Cactus- Flowered Zinnia

I love the way the petals go this way and that on the Cactus flower variety. This one promises to be at least 6 inches across!

Orange King Zinnia
A butterfly and bee magnet!

 Growing Zinnias

Zinnias don't really like being started early in the greenhouse... They much prefer being directly sewn in well drained organic soil in direct sun as soon as the danger of the last frost has passed.
Once they have germinated and begin to grow keep an eye out for slugs and other leaf chewing insects who love to dine on fresh new greens!
Treat any issues with Sluggo a non toxic Slug and Snail Bait. Safe for use around pets and children.
Once your zinnias are growing and blooming they only need a deep watering once a week.  To keep those bloom coming all summer and into the fall, feed every 2-3 weeks with any organic plant and flower food of your choice. I went with an organic plant food liquid that I could dilute and easily apply from a 2 gallon water jug.

Here's to the lovely Zinnia Flower!

Feeling Better

So much for getting a running start on the new year! THE flu bug hit Dandelion House at warp speed right after New Years Day.  First our daughter had it, then our son and I got it at the same time.
The only running we've done is from the couch then back to bed! Needless to day I'm way behind in getting my house in order for a proper start on the new year. Oh well. What can ya do? Stock up, that's what!

Plain old simple ( and healthy ) ingredients  are what's called for when you are treating a bout of seasonal influenza!

BREAKFAST: OJ with pulp, bananas, pecans, oatmeal, agave, cranberries and vanilla bean yogurt.

LUNCH:Crackers with tuna or chicken salad, fresh fruit hot chicken broth or tea.

DINNER: Soup, grilled cheese sandwich, applesauce, small garden salad with slices of apple and cheddar cheese.

HYDRATE: Cherry flavored 7-up, Gatorade, water, fruit juice, sparkling soda, plain or flavored. And, popsicle's of course!

MEDICINE:  Day time/night time cold medicine. A must for calming down  achy muscles and minimizing coughing fits!

REST:  I can't stress this one enough. All we've done is sleep off and on for the last three days. Today I feel human again.

Boz is the only one who hasn't been bit! Keep you fingers crossed he escapes it!
Here's to a healthier 2013 starting today!

 Love,
Deb... could you pass the Kleenex please?

PS. how do you treat the flu in your house?
