Howdy friends! October is the month for Apples! Many of you have been sharing wonderful recipes with apples, from making your own cider to homemade applesause. I confess, I'm not that ambitious, ( yet ) but I do love baking with apples so today I'm sharing a recipe with you called :
Maple Apple Blueberry Oatmeal Crisp.I have featured this recipe before using cranberries but while we were out for lunch yesterday I happened to notice an Apple Blueberry Crisp dessert on the menu. Rather than order it, I decided to try and make it myself! I'm sharing it with you, only because it got the thumbs up from Boz. He's my apple lover in the house and the official taste tester too! I'm no Pioneer Woman when it comes to food photography but I give it my best shot! For some reason it's always evening when I decide to blog about food so I'm working without natural light and I'm usually ready for bed, but the good news is, you don't have to eat the photos and if you follow this recipe to a T this will be some of the" best apple crisp " you've ever had. Well, that's what Boz said when he tasted it! Try it, you'll see!
Filling
6 cups peeled, thinly sliced organic apples *
( about 6-8 medium)
3/4 cup blueberries
1/3 cup organic maple syrup *
1Tbsp. fresh squeezed lemon juice
1tsp.organic vanilla extract
1tsp. organic ground cinnamon
1/4tsp. organic nutmeg
Directions
1. Preheat oven to 375 F. Lightly oil an 8-inch square glass baking dish or a 9- inch deep dish pie plate.
Topping
( Quick or Old Fashioned, uncooked)
3/4 cup brown sugar
1/3cup organic flour
1tsp. organic ground cinnamon
1tsp. fine sea salt
4Tbsp. ( 1/2 stick) organic butter, melted
4. Bake for 35-40 minutes or until the fruit is tender.
Remove from oven and let rest for 20 - 30 minutes.
( yeah, right )
Serve warm with vanilla ice cream or whipped cream.
This dish is also a great breakfast or snack topped with vanilla yogurt!
* you can also substitute peaches or pears for the apples
* you can purchase organic syrup or make your own.

Dandelion House Simple Organic Maple Syrup
3 cups granulated suga3 cups brown sugar
3 cups water
3 tea spoons maple extract
3 tea spoons vanilla extract
Pour water in a large pot and add all sugar. Bring to a low boil then reduce heat, stir and let cool for an hour or so.
After it has cooled you can add the flavored extract and serve.
Keep your syrup refrigerated.
*For organic syrup, just use all organic ingredients. It's that simple!

Speaking of SCRATCH. Save your apple peels for your chickens, guinea pigs, or toss em in the compost pile!

Oh yummy! I'm in a blueberry kinda mood right now so this is definitely on the menu! And I LOVE your first photo with all the ingredients, especially the cored apple! :)
