Tasty Tuesday~ City Boy Hens Bread and Butter Pickles



Have you met Rick from City Boy Hens?  
Rick is a City Boy working on unleashing his inner farmboy and sharing his adventures through his blog City Boy Hens. I spent some time on his blog last week and I know you'll love visiting him too! Rick linked up with us last week on Farmgirl Friday and I wanted to give him a warm welcome!
  I love it when farmboy's  joins in to share!

It turns out that I am really a country boy who is trapped in a city boy’s body. It’s all now starting to make sense. I finally understand why I live on a ravine lot that is bordered with a split rail fence, why I made a living building reproduction furniture for 15 years, why my man cave resembles a pioneer homestead in the late 1800s, and why I choose to travel 264 km on a Friday night with wife, kids, dog and chickens in order to have a cup of coffee by “the lake” on a Saturday morning?

Tasty Tuesday~ Mini Cherry Pie Cookie Bites


I know it's still very, very hot in some places so if you're still on strike from baking be sure to  bookmark this easy recipe for Mini Cherry Pie Cookies  for a " cooler " time. 

This weeks Tasty Tuesday recipe comes from Lisa's homestead kitchen/ Feathers in the Woods Blog. 

Lisa  shares her simple recipe for  re-creating  those tasteless mini cherry fruit bites which are so tempting at the store but oh so disappointing once you get them home and bite into one. They just never taste as good as something homemade do they?



And look at the difference in appearance. Lisa's homemade Mini Cherry Pie Cookie Bites look so much better than the packaged store-bought variety.

Tasty Tuesday~ Cottage Coffee




 Welcome to Tasty Tuesday at Dandelion House! Your go- to spot for trying something new, healthy, and frugal ( with a pinch of pretty) each week in your homestead kitchen.

 This weeks Tasty Tuesday recipe comes straight from the Cottage. Our cottage! This is the time of year we give way to a simpler life. Cottage Life! Our summer cottage is off grid so we make-do with  an old fashioned looking percolator coffee pot.Our model comes from Paula Deans Kitchen Collection. Here's the recipe! 

Cottage Coffee

Fresh ground coffee of your choice. ( We use DE-cafe Hazelnut cuz it's our favorite)!
Cold tap water
 For 5-6 cups of coffee you'll need a minimum of 1/3  - 1/2 cup coffee grounds.
( more if you like your coffee strong )

Never fill up your coffee pot above the holes on the inside of the pot.
It'll boil over every time. Trust me, I know!
Boil for 8 - ten minutes then turn off the burner and let the water drip down into the pot.
Serve hot right off the stove or pour into a coffee carafe to keep it hot!

We like to dip chocolate biscotti into our coffee... It's our Cottage Coffee treat!

Tasty Tuesday~ Homemade Sour Cherry Pie Filling

Homemade Sour Cherry Pie Filling

Today's the day I get to go rummaging through your Farmgirl Friday entries to find something delicious to share and I must say, I am never disappointed. To the contrary, you make it hard! I always have a tough time deciding so I just let my taste buds do the choosing for me! 

This week's featured recipe comes from The Chick n' Coop  Homestead Kitchen.
Farmlife Chick shared her Homemade Sour Cherry Pie Filling with a secret ingredient for adding color.

Canning season has begun around here! We canned our strawberry jam last week. This week sour cherries were ready! They were delicious!! I have never canned cherries before, but I was very excited.It was so easy. I couldn't believe it. Why have I never done this before?

 You will notice that the coloring is not that dark, deep red that you typically will see in canned filling. That's because I did not add cherry kool-aid or red food coloring to it. I added strawberry puree! About 5 tablespoons to be exact. There is no strawberry flavor what so ever. It just gave it a nice pinky look to it instead of it being in a whitish clear gel.

I made enough for 6 and 3/4 quarts. Almost 7, but not quite. I'm sure if you add another cup of cherries to the pot you could top off the 7th quart.

Sour Cherry Pie Filling

5-6 quarts of fresh sour cherries
7 cups of sugar
1 3/4 cups of cornstarch
1/4-1/2 cup of lemon juice
2 tsp. of almond extract
5 Tbs. of strawberry puree for coloring
6-7 sterilized quart canning jars with lids


Rinse and pit cherries. Combine sugar and cornstarch in a large sauce pan. Then, add your water and almond extract. Stir and cook over medium high heat till it thickens and bubbles. Then, add lemon juice and stir continuously for 1 minute while it boils. Remove from heat, fold in cherries and strawberry puree. Fill quart jars. Hot water bath for 30 minutes.

  This was so delicious. My neighbor gave me this recipe with out the puree added. She leaves hers clear. I had to have some color in there and I had puree on hand, so we experimented and it worked!

I was a little reluctant to use the almond flavoring, but what a difference. I can't imagine it without it!

I believe this recipe would work with sweet cherries as well. It may not have the tartness to it, but I think it would be delicious. I am so thankful for my neighbor as it was her cherries and recipe!

I hope you are enjoying my weekly Tasty Tuesday features as much as I do choosing them! The heat is on now that it's Summer and nothing cools me off or tastes better than ice cream on a hot summer's day or night! 

Sometimes we have more ice cream in our freezer than anything else during the summer! Because of our deep love of ice cream, I'm sharing NOT ONE, BUT TWO great recipes you can enjoy with your family and guests. Both are easy enough to whip up for a Fourth of July BBQ too!

Are you drooling yet? When ever I saw these delicious looking Banana Pudding in a Jar I just had to share Mr's H's of Heritage Schoolhouse yummy idea with you! How perfect would these be for a picnic, beach day, camping or a long car ride this summer?

 I love banana cream pie, but who wants to heat up the oven in the middle of summer? Not THIS 51 YEAR old farmgirl! I'm hot enough already! I'll be whipping some of these up for those hot nights to come when something cold and sweet fits the bill!

 I'm a sucker for a pretty table. Doesn't matter what style if it's got a mix of pretty vintage dishes, fresh flowers and place cards that make it " personal ".
This weeks Tasty Tuesday Feature comes from the darling Sweet Nothings Blog   authored by the talented and funny B.J.  I laughed right out loud when I read BJ's post that she shared on our Farmgirl Friday Blog Hop last week.

to say that I've never, EVER used PLACE CARDS at our table.

Tasty Tuesday~ Using Vintage Kitchenware: Corning Ware

Who remembers growing up with Corning Ware Kitchenware? My mother prepared so many wonderful meals for our family of 5 in dishes just like those pictured above. They went from oven to table and straight into the frig if there were any leftovers and right back into the oven to be reheated.

I don't know when we decided as a society that plastic rules. I know it has it's place in the storage world, but let's face it, now there are warnings about heating food in plastic containers in the microwave, they melt in the dish washer, and the lids grow legs and disappear. 
No wonder Tammy from Taylor-Made Ranch uses her vintage cookware. Besides the wondeful memories of her grandmother in conjures, it just makes good sense. 

It's not too hard to find in thrift stores, yard sales and estate sales. In fact, I passed up a set just yesterday when I went to our local Savers to pick up a piece of furniture I bought for painting. After reading Tammy's thoughts about her Corning Ware I'm considering a quick trip back to see if it's still there! 

" For the past several years I have been mindful of the type of dishes in my kitchen.  I don’t want inexpensive cheaply-made items, I want cookware that will serve me for years.  One of the highest-used items in my kitchen is my collection of Corning Ware.  These covered glass casserole dishes are safe to use in the oven or microwave, and are of course dishwasher safe and that kind of versatility works for this country girl!"   Who hasn't fallen in love with grain sacks lately?  But, original gran sacks are expensive in good condition making them an " out of the budget item" for many. As I was reading through last weeks Farmgirl Friday  entries looking for this weeks feature I spotted Heather's ( New  House, New Home, New Life) easy tutorial for her knock-off grain sack table runner. 
Here's what heather had to say about making her own in under an hour.
 
" The lowly grain sack has taken on a whole new life thanks to Pinterest, Hometalk and the blogosphere. I love it's vintage farmhouse country look and wanted to incorporate this into our kitchen decor. Using some leftover canvas from previous projects, a new table runner was made in under an hour."

Tasty Tuesday~ FRESH Strawberry Pie

 Depending on where you live, it just might be strawberry season already! Who doesn't LOVE a fresh picked, sweet and juicy strawberry right out of the patch? Strawberries do taste best at room temperature but if you bake or cook with them, you must try Dolly's FRESH STRAWBERRY PIE!
Before you click over to Dolly is Cooking for the full recipe  ( and more delicious southern fried recipes) read Dolly's hints below for picking the best strawberries! How does she know? Well, she worked on a Strawberry Farm of course!

 

  *** Hints for picking the best strawberries*** 
When your local berry field opens
  If you are like me excited to eat some go pick some to eat and enjoy that first real berry taste
1. Wait about 2 weeks then go and pick more they will be sweeter, providing the weather is warm.
2.  If you are going to make jam wait until they are very ripe and sweet.
3.  Do not pick if the nights are very cold~your berries will be bitter not very sweet
*When the nights are warm and there is plenty of sun then go pick!
4.  Do not wash or cap your berries until you go to use them.
5.  Refrigerate them dirty...If you have a few not quite ripe leave them out on counter overnight...
6.  Freeze your berries washed drained on paper towels. Place on a baking sheet not touching first freeze, then place those berries in a freezer bag for making jam, or using in baking.
*No they will not taste like a fresh berry when taken out of the freezer I don't care who tells you that.
7.  You may prepare berries for freezing to make shortcakes over the winter in this way with room      temperature strawberries.
     a.  wash and slice
     b.  Keeping on counter still at room temp. add sugar, stir often to dissolve the sugar, They will make their own syrup.  When you have the syrup you need in them, usually within an hour place in freezer bags and freeze.
8.  Pick as often as you can because the season is short lived enjoy every minute of it!
